  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, cottage cheese, brown sugar, eggs, and vanilla extract.
  3. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into a greased muffin tin.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
