Pumpkin & Gouda Stuffed Shells With Brown Butter & Sage Alfredo Sauce

  • 12 large jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup gouda cheese, shredded
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons butter
  • 1 tablespoon fresh sage, chopped
  • 2 cups heavy cream
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix pumpkin puree, gouda cheese, nutmeg, salt, and pepper until well combined.
  4. Stuff each pasta shell with the pumpkin mixture and place them in a baking dish.
  5. In a saucepan, melt the butter and sage over medium heat until the butter begins to brown.
  6. Add the heavy cream and parmesan cheese, stirring until the sauce thickens slightly.
  7. Pour the brown butter sage Alfredo sauce over the stuffed shells.
  8. Bake in the preheated oven for 20-25 minutes until heated through.

Notes

  • For added flavor, sprinkle extra gouda on top before baking.
  • This dish can be made ahead and baked when needed.
