Roasted Tomato and Garlic Ricotta Pasta

A delicious and simple recipe for roasted tomato and garlic ricotta pasta.

Ingredients

  • 2 cups cherry tomatoes
  • 4 cloves garlic
  • 1 tablespoon olive oil
  • 8 ounces pasta of choice
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the cherry tomatoes and garlic with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Cook the pasta according to package instructions; drain.
  4. In a large bowl, combine the roasted tomatoes and garlic with ricotta and Parmesan cheese.
  5. Add the cooked pasta to the mixture and toss to combine.
  6. Serve garnished with fresh basil.

Notes

  • For a creamier sauce, mix in a bit of pasta water.
  • Feel free to add other vegetables like spinach or zucchini.
