Shakshouka Toast

Shakshouka Toast is a delicious and easy-to-make dish that combines the savory flavors of shakshouka with the crunch of toast.

Ingredients

  • 2 slices whole grain bread
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes
  • 4 eggs
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell peppers, cooking until softened.
  3. Stir in garlic, cumin, and paprika; cook for another minute.
  4. Add diced tomatoes to the skillet, season with salt and pepper, and simmer for about 10 minutes.
  5. Make four wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are done to your liking.
  7. Toast the slices of bread and top each with shakshouka and a cooked egg.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • For extra flavor, add crumbled feta cheese on top before serving.
