Shepherd’s Pie – Mushroom and Lentil

Shepherd’s Pie is a delicious comfort food that combines hearty mushrooms and lentils for a satisfying meal.

Ingredients

  • 2 cups lentils
  • 1 pound mushrooms, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 2 cups mashed potatoes

Instructions

  1. In a large pot, cook lentils according to package instructions until tender.
  2. In a skillet, sauté onions, garlic, and carrots until soft.
  3. Add mushrooms and cook until browned.
  4. Stir in the lentils, tomato paste, Worcestershire sauce, thyme, and vegetable broth. Simmer for 10 minutes.
  5. Transfer the lentil mixture to a baking dish and top with mashed potatoes.
  6. Bake in a preheated oven at 400°F (200°C) for 30 minutes.

Notes

  • You can add other vegetables like peas or corn for added flavor.
