4 chicken thighs
1 cup long-grain rice
3 cups chicken broth
1 lemon, juiced and zested
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a slow cooker, combine the chicken thighs, rice, chicken broth, lemon juice and zest, olive oil, oregano, garlic powder, onion powder, salt, and black pepper.
Stir to combine and nestle the chicken into the mixture.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
Once cooked, remove the chicken and fluff the rice before serving.
