Slow-Braised Beef Roast with Cranberry Balsamic Glaze

A delicious and tender slow-braised beef roast glazed with a sweet and tangy cranberry balsamic sauce.

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large pot, heat the olive oil over medium heat. Sear the beef roast on all sides until browned.
  3. Remove the roast and set aside. In the same pot, add the onion and garlic, sautéing until softened.
  4. Add the cranberry juice, balsamic vinegar, brown sugar, salt, and pepper. Stir to combine.
  5. Return the beef roast to the pot, cover, and transfer to the oven. Bake for 3-4 hours, or until tender.
  6. Remove the roast from the oven, let rest for 10 minutes, then slice and serve with the glaze.

Notes

  • For extra flavor, marinate the beef in the cranberry mixture overnight.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
