- 1 pound chicken thighs
- 1 can coconut milk
- 2 tablespoons Brazilian chili paste
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lime, juiced
- 2 tablespoons olive oil
- In a large bowl, mix coconut milk, chili paste, onion, garlic, ginger, salt, and pepper.
- Add the chicken thighs to the marinade and refrigerate for at least 1 hour.
