Spinach and Feta Quesadillas

Deliciously cheesy and loaded with spinach, these quesadillas are an easy comfort food perfect for any meal.

Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 4 flour tortillas
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add spinach and sauté until wilted.
  3. In a bowl, combine wilted spinach, feta, garlic powder, and onion powder.
  4. Spread the mixture evenly on half of each tortilla.
  5. Top with mozzarella cheese and fold the tortillas over.
  6. Cook each quesadilla in the skillet until golden brown on both sides and cheese is melted.
  7. Slice and serve warm.
