  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups strawberries, pureed
  • 1 tablespoon gelatin powder
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add sour cream and mix until well combined.
  5. Pour the cream cheese mixture over the crust and smooth the top.
  6. Bake for 50-60 minutes, then turn off the oven and let it cool inside for 30 minutes.
  7. Remove from the oven and let it cool completely at room temperature.
  8. In a saucepan, heat strawberry puree and dissolve gelatin powder in it.
  9. Stir in powdered sugar and mix well.
  10. Once the cheesecake is cool, pour the strawberry mixture on top and refrigerate for at least 4 hours or until set.

  • This cheesecake can be made one day in advance for better flavor.
