- 2 medium sweet potatoes
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red onion, diced
- 1 tsp cumin
- 1 tsp chili powder
- 2 tbsp olive oil
- Salt to taste
- 1 avocado, sliced
- 1/2 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them with olive oil, salt, cumin, and chili powder.
- Spread the sweet potatoes on a baking sheet and bake for 25-30 minutes until tender.
- In a skillet, sauté the red onion until translucent.
- Add the black beans and corn to the skillet and warm through.
- Assemble the taco bowl by placing the roasted sweet potatoes, bean mixture, avocado, and cilantro in bowls.
- Serve with lime wedges for squeezing over the top.
