Sweet Potato Taco Bowl

Ingredients

  • 2 medium sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Salt to taste
  • 1 avocado, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, cumin, and chili powder.
  3. Spread the sweet potatoes on a baking sheet and bake for 25-30 minutes until tender.
  4. In a skillet, sauté the red onion until translucent.
  5. Add the black beans and corn to the skillet and warm through.
  6. Assemble the taco bowl by placing the roasted sweet potatoes, bean mixture, avocado, and cilantro in bowls.
  7. Serve with lime wedges for squeezing over the top.
