Tex-Mex Beef Enchiladas

  • 1 cup chopped onion
  • 2 cups enchilada sauce
  • 10 corn tortillas
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef and onion over medium heat until cooked through.
  3. Add the cumin and chili powder, then mix well.
  4. In a separate dish, spoon some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture, roll it up, and place it seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly.
  8. Serve with sour cream and cilantro on top.
