- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup chocolate chips
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and softened butter. Mix until smooth.
- Add the eggs and vanilla extract, and continue mixing until well incorporated.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips gently.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
