These Thick & Chewy Pumpkin Chocolate Chip Cookies are the perfect fall treat, combining the rich flavors of pumpkin with the sweetness of chocolate chips.

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and softened butter. Mix until smooth.
  3. Add the eggs and vanilla extract, and continue mixing until well incorporated.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips gently.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until edges are golden brown.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • You can substitute pumpkin spice for cinnamon and nutmeg.
  • Make sure to let the cookies cool completely before storing.
