Tomato Soup with Cheese Dumplings

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon baking powder

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  2. Add the crushed tomatoes, vegetable broth, basil, sugar, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  3. In a bowl, combine the cheese, flour, milk, egg, and baking powder to form the dumpling dough.
  4. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for an additional 10 minutes, or until the dumplings are cooked through.
