Tortellini Pasta Salad

A refreshing and easy summer pasta salad featuring tortellini, fresh vegetables, and turkey bacon, perfect for picnics and gatherings.

  • 1 pound cheese tortellini
  • 6 ounces turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a pan, cook turkey bacon until crispy. Let it cool and crumble.
  3. In a large bowl, combine the cooked tortellini, bacon, cherry tomatoes, cucumber, red onion, feta cheese, and basil.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, add some olives or bell peppers.
  • This salad can be made a day in advance.
