Ingredients

  • 2 cups lentils
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups mashed potatoes
  • 1/4 cup nutritional yeast

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pot, cook the lentils until tender.
  3. In a pan, sauté onions and garlic until fragrant.
  4. Add in carrots, peas, tomato paste, and herbs; stir well.
  5. Combine the lentils with the vegetable mixture.
  6. Transfer to a baking dish and top with mashed potatoes.
  7. Bake for 30 minutes or until golden.
