Vegetarian Stuffed Peppers

A delicious and wholesome vegetarian dish featuring bell peppers stuffed with a mix of vegetables and grains.

Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the quinoa in vegetable broth according to package instructions.
  3. While the quinoa is cooking, cut the tops off the bell peppers and remove the seeds.
  4. In a bowl, combine the cooked quinoa, black beans, corn, cumin, paprika, and salt.
  5. Stuff the bell peppers with the mixture and place them in a baking dish.
  6. If using, sprinkle cheese on top of the stuffed peppers.
  7. Bake for 25-30 minutes, until the peppers are tender.
  8. Serve warm and enjoy!

Notes

  • For a spicier version, add diced jalapeños to the filling.
  • Leftover filling can be used as a salad topping.
