  • Freshly ground black pepper to taste
  • 4 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup cranberries, dried
  • 1/4 cup pecans, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, whisk together apple cider, apple cider vinegar, brown sugar, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  2. Add chicken thighs to the bowl and marinate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Arrange the chicken thighs in a baking dish and pour the marinade over them.
  5. Bake for 30-35 minutes or until the chicken is cooked through and caramelized.
  6. For the slaw, in a large bowl, combine cabbage, carrots, cranberries, and pecans.
  7. In a small bowl, whisk together olive oil, maple syrup, and lemon juice.
  8. Pour the dressing over the slaw and toss to combine.
  9. Serve the sticky apple cider chicken alongside the crisp autumn slaw.
